Nestled in the heart of Cauca at an elevation of 1,700 meters above sea level, Popayán is blessed with the perfect landscape for growing exceptional coffee. Protected by the Andes mountain range, the region enjoys stable climate and altitude conditions, allowing the coffee to develop bright, sweet, and citrusy notes.
The importer proudly partner with around 75 dedicated farmers in the area, fostering long-term relationships built on trust and mutual commitment to quality.
After carefully selecting the finest coffee cherries, they are de-pulped and thoroughly washed to eliminate all mucilage. The beans are then spread out on raised beds for 5-7 days, allowing them to dry to the perfect moisture level. This method preserves the coffee’s unique flavors and characteristics.
Decaf Process
The decaffeination process is truly special. Using sugar cane-derived Ethyl Acetate (EA) and water, caffeine is gently extracted, enhancing the coffee's natural sweetness while retaining its distinct flavors. The green beans are first steamed to remove the silver skin, then soaked in spring water. Once fully saturated, the beans are placed in extractors where they’re exposed to sugar cane Ethyl Acetate for 8 hours, dissolving the caffeine. Finally, the decaffeinated beans are dried in a chamber to restore their original moisture content.
